Ingredients

  • 1 sprig fresh mint
  • 1 ounce lime juice, freshly squeezed
  • 1 1/2 ounces Appleton Estate Reserve rum
  • 3/4 ounce pure cane simple syrup
  • 1 dash Angostura bitters
  • Champagne, to top
  • Garnish: mint sprig

Directions

  1. In a shaker, gently muddle the mint and lime juice.
  2. Add the rum, simple syrup and bitters, fill with ice, and shake until well-chilled.
  3. Strain into a highball glass filled with fresh ice.
  4. Top with Champagne and garnish with a mint sprig.
